When I woke up this morning, the thermometer said zero. Zero! (I don't even know how you list that as a degree... is it singular or plural?)
Anyway, I know it's winter and I know this winter was predicted to be exceptionally cold, but I'm over these freezing temperatures. It seems like no matter how many layers I put on, I'm still cold. Thankfully, the sun in shining today, so Mother Nature has that going for her.
On this cold day, I'm in charge of dinner for my family. Tonight that means my parents, myself, my aunt and my grandparents. As cold as it is, I decided to whip up some comfort food in the crock pot. It's a filling and delicious meal, but not necessarily the healthiest. Sometimes, though, you need a little bit of that in your life.
I got this recipe from a former coworker. In my first post-graduate job, we used to hold pot-luck dinners to encourage "togetherness" and "team building." Not sure if it succeeded in those efforts, but it introduced me to a lot of yummy meals. This dish is one of them.
